Hi I would appreciate if you could suggest a more formal term (in the wine world) than what I'm assuming is fine-tuning (of aging).
Context is:
"Crianza en barricas de roble frances y americano durante un periodo e entre 12 y 14 meses. Posterior afinamiento en botella hasta su salida al mercado, con un tiempo aproximado de dos anos entre barrica y botella."
