Este término se define como aparece en condiciones favorables para el desarrollo de bacterias (fermentaciones ralentizadas o detenidas) cuando todavía hay azúcar en el mosto. Se transforman los azúcares de seis átomos de carbono en etanol, carbónico y ácido acético. En el medio aparece el isómero D del ácido láctico, mientras que el L-láctico se origina en la FML. Este fenómeno es provocado por bacterias lácticas.
