INGREDIENTES:
Cazón o Caella, vinagre, orégano, ajo machacado, sal y pimentón .
ELABORACIÓN:
El adobo o adobito sevillano es una de las tapas más clásicas de Sevilla.
Se pueden adobar infinidad de pescados, tanto de mar como de río, en este caso del Río Guadalquivir.
Nosotros utilizamos en esta ocasión el cazón, éste se corta en pequeños trozos, y se macera, se adoba, en un aliño compuesto de vinagre, orégano, ajo machacado, sal y pimentón .
Una vez que ha cogido la maceración, 24 horas, se pasa por harina y se fríe en abundante aceite de oliva...., el resultado: una delicia sevillana.

More of a description, really. I must confess that I have no idea what the English adjective for Seville is!

Sevillian diced fish
I don't live in Seville, but I visit a lot, and what they commonly know as "adobe" is a diced cat/dogfish in a fine batter, albeit marinated beforehand. If the restaurant uses the adjective "sevillano", I presume they're referring to this. I'd just put ""Sevillian" diced fish.

Different fish are used for this recipe, and it is always marinated and deep fried covered with flour or batter... I suppose the word "crispy" is enough to suggest deep frying.

Gary's description is good, but diced sounds too small for this chunky dish? Cgowar is right to try to convey the crispiness of the dish.
