I know that, generally, sakarkand is "sweet potato" but what I'm looking for is the English name of a variety that can be and even should be, eaten raw. When cooked, it's supposedly not so tasty. The tubers are longish, purple, and white inside.

It is actually (Ipomoea batatas), food plant of the morning glory family (Convolvulaceae, but Sweet potatoes are served as a cooked vegetable, in whole or mashed form, and are used as pie filling.
