1) consolidate の後の、their IT の意味がわかりません。their IT with なら意味が通ると思うのですが。

方向は間違っていません。Withですが、上にも述べましたように、同じ意味の文章にする場合、文章を変える必要ができてきます。
一例として、
With Riverbed, enterprises are given (あるいはoffered)the platform they need to understand, optimize and consolidate their IT, and helps enterprises to build a fast, fluid and dynamic IT architecture that aligns with the business needs of the organization. というような文章になると思います。意味としては上記の原文と同じですが、Riverbedによって企業は・・・となりますよね。
withを入れてしまうと文章としては、with の後に名詞が来なくてはならず（この場合、Riverbedになります）、文体を変えてしまわなくてはなりません。
