pomace

Pomace (pronounced /ˈpʌmɪs/, PUM-is) is the solid remains of grapes, olives, or other fruit after pressing for juice or oil. It contains the skins, pulp, seeds, and stems of the fruit.

The process produces wastewater, pomace, and lees that require collection, treatment, and disposal or beneficial use.

Mislim da je to jer se i kod proizvodnje maslinova ulja ono što ostane naziva komina, a ovdje je također navedeno.
Od te se komine (u Dalmaciji se to zove drop) destilacijom dobiva rakija.

Pomace brandy (or marc brandy) is a liquor distilled from pomace wine. malo me zbunjuje ova formulacija "dok ostatak komine se koristi..." ispada kao da se iz komine iskoristi samotok, a ostatak komine da ide u destilaciju... no čini mi se da se zapravo cijedi i preša mošt u bačvi, a ono sve što preostane je komina... ta komina je svakako čini se pomace, samo mislim da se ne može reći "the rest of the pomace is used..." jer prije samotoka nije bilo pomacea...

Must
The must is the mixture of fermenting grape juice, pips, skins, stalks and so on. It is distinct from marc, which is all of these once the grape juice has been removed. An assessment of must weight is vital in guiding the winemaker.
