What does it mean "Packaged in a protective atmosphere"?
Oxygen occurring in the air is indispensable to our existence, yet it is also responsible for a number of undesirable reactions which can impair the freshness of foodstuffs, such as fatty foods becoming rancid, the darkening of fruits or changes in taste.
In order to maintain our products' freshness until you get the chance to enjoy them, oxygen is replaced by nitrogen (the main component of air) or a mixture of nitrogen / carbon dioxide during the packaging process.
This process must be quoted on the packaging for the information of the consumer.
The protective atmosphere therefore serves the purpose of protecting our specialities, and is completely harmless.
Packing in protective atmosphere
