Båtene brukes i hovedsak til frakt av smolt og slaktefisk, men det er en tendens til at båtene blir brukt til andre arbeidsoperasjoner som sortering, avlusing, flytting av fisk, slepeoppdrag etc.
Is this a type of fish, or slaughter fish to be slaughtered and prepared for eating?

Slaughterfish as species? I was confused for awhile when googling "Slaughterfish", wondering if this was a species I had never hear of. Then I discovered the google hits came from an imaginary creature from video game called Oblivion. So now that my brain has been mistreated by the traps of the video age, I think I will go with slaughter fish!

I believe you are on the right track here You'll find a lot of hits for "slaughter fish" in papers and articles that fit this context.

fish heading to the slaughterhouse Fish carriers are used for transportation of living fish to slaughterhouse. The idea here is that slaktefisk er destined for a slaughterhouse.

neutral Hakon Vinje : However, be careful. Farmed fish is not necessarily the same as "slaktefisk". Farmed fish is "oppdrettsfisk". In the context above, the is a clear distinction between smolt and 'slaktefisk', so perhaps "mature fish" is better

Jeg mener bestemt at i setningen du presenterte, er ikke poenget hvorvidt det er snakk om oppdrettsfisk konta villfisk, men storrelsen paa fisken. "Båtene brukes i hovedsak til frakt av smolt og slaktefisk" er kanskje bedre som "the boats are used primarily for transporting smolt and harvest size fish"

Det er mulig at adult fish eller mature fish kan brukes.
