What is bread flour? Can I substitute all-purpose flour?
Bread flour is a high-protein flour, specially formulated for making yeast breads. The combination of protein, a tiny bit of malted barley to help the yeast, and vitamin C or potassium bromate to help the formation of the gluten, helps the dough rise and retain gasses as it bakes, resulting in greater volume and better texture.
You can certainly substitute all-purpose flour in a recipe, but the results will be less spectacular. If you have a box of wheat gluten handy, you can add a tablespoon or so to your bread recipe to get essentially the same results as if you had used the bread flour.

"I am assuming from Elizabeth David's description that our all-purpose white flour (unbleached?), though slightly higher in gluten content than British "ordinary plain household flour", would do just fine for this recipe. (BTW, I like using half unbleached all-purpose flour and half cake flour (Softasilk brand, and always bleached) for shortbread cookies."

: Most vettem lisztet a Tescoban, de egyetlen zacskóra sem volt írva, hogy háztartási liszt. Van finomliszt, fogós liszt, rétesliszt, stb.

Ez a magyar "all purpose flour". Búzaliszt, ami mindenre jó, ha nincs speciális liszt kéznél.

: Fine flour illetve BL-55 mit jelent? Örülök, hogy te is finomlisztnek tartod, de ennek fine flour a fordítása. A szemályautó magyar fordítása meg Dacia/xxxx, mert ott sok van belőle.

B - búza, második betű szemcsenagyságot jelöl: L (liszt) - apró szemcséjű finomliszt, F (fogós)- nagyobb szemcsenagyság.Minél nagyobb a szám, annál több a korpa benne.Ez a BL51 utáni, ami "sima", régen 00. Attila, túl régóta vagyok gyakorló háziasszony.

Az "all-purpose-flour" különböző - alacsonyabb és magasabb fehérje (glutén)-tartalmu - búzák keverékéből készül; a fehérjetartalom különbözteti meg pl. a kenyérliszttől, nem pedig a szemcseméret. Ezért szerintem nem pontosan felel meg egyik magyar liszt kategóriának sem, bár felhasználás szempontjából a finomliszthez áll a legközelebb. A régebbi szakácskönyvek sokszor egyszerüen csak "liszt"-et emlegetnek - nem lenne ez járható ut?

: De, szerintem is járható út- Attila megoldása csak annyival jobb esetleg, hogy megkülönbözteti az ipari liszttől (bár ha a recept célközönségére gondolunk, szerintem senki nem tart otthon ipari lisztet.)
