More info from client The client finally did send some clarification...apparently it is literally a "rose" made out of thin slices of rare roast beef: "La rosa di manzo è un taglio di carne, (girello), che viene cotto in tecnica sottovuoto, la carne rimane al sangue all’interno, dopo averla tagliata sottile con l’affettatrice viene disposta a forma di rosa nel piatto e condita con tartufo nero estivo e olio al tartufo." I decided to avoid mentioning the cut, since Italian cuts do not correspond directly to U.S. cuts, which do not correspond directly to U.K. cuts, and who knows where English-speaking customers of this restaurant might be from.

Grazie a tutti per i suggerimenti! Ho deciso di mettere solo "roast beef" - il problema e' che i tagli negli Stati Uniti e nel Regno Unito sono diversi, e diversi anche dai tagli italiani -- quindi non c'e' una corrispondenza esatta, o un termine solo che avrebbe senso per tutti i clienti stranieri.

Inner part of the hindquarters

Rosa di manzo indicates a cut of beef from the inner muscle of the back leg.

Rosa (o fesa interna): questo taglio è un piuttosto magro, coperto solo da una sottile fascia di grasso, è detta anche punta d’anca e si trova nella parte alta della coscia del manzo. Con la rosa si fanno fettine impanate e bistecche.
